You do not have a food allergy — your throat does not close up when you eat wheat or dairy. But every time you eat certain foods, you feel lousy afterward: bloated, tired, foggy, or inflamed. Food Allergy vs. Food Sensitivity: The Difference

Food allergies involve IgE antibodies and produce immediate, often severe reactions: hives, anaphylaxis, throat swelling. They are life-threatening and require complete avoidance. Food sensitivities involve IgG or IgA antibodies and the innate immune system, producing delayed reactions that can occur hours or even days after eating the offending food. This delay is what makes them so difficult to identify on your own.

How Food Sensitivities Drive Weight Gain

When you eat foods your immune system has tagged as problematic, it triggers a low-grade inflammatory response. Inflammation drives cortisol, which promotes fat storage — particularly in the abdomen. It also disrupts leptin signaling (your satiety hormone), contributing to persistent hunger. Gut permeability (‘leaky gut’), often associated with food sensitivities, impairs nutrient absorption and further fuels inflammation.

Many patients who finally identify and remove their reactive foods report weight loss without changing their caloric intake at all — simply because the inflammatory burden drops.

Common Food Sensitivity Culprits

  • Gluten — especially in women with Hashimoto’s thyroiditis or autoimmune conditions
  • Dairy — both lactose (a sugar) and casein (a protein) can trigger reactions in sensitive individuals
  • Eggs — particularly egg whites
  • Soy
  • Corn
  • Nightshades — tomatoes, peppers, eggplant (more common in those with inflammatory conditions)
  • Processed seed oils and additives — not true sensitivities but pro-inflammatory for many

IgG food sensitivity blood tests are available and can be useful as a starting point, though they have limitations and should be interpreted alongside clinical history. The gold standard remains a structured elimination diet — removing the most common reactive foods for 4-6 weeks and then methodically reintroducing them one at a time to observe reactions.
